Sometimes I worry that I post too much Mexican and Italian food here…and then I went and made this. #Mexitalian is a thing right? If you are looking for satisfying, quick lunch options then this Chicken Parmesan Quesadilla needs to go to the top of your list!

Chicken Parmesan Quesadilla
(Serves 1)
* 3 oz Tyson Anytizers Popcorn Chicken
* 1 Mission Carb Balance Soft Taco Tortilla
* 1/2 cup shredded Mozzarella cheese
* 1 Tablespoon Grated Parmesan cheese
* 1/4 teaspoon garlic salt
* 1/4 teaspoon Italian seasoning
* 3 Tablespoons Prego No Sugar Added Pasta Sauce
1. Cook chicken according to package directions.
2. Heat a small skillet over medium heat, spray with cooking oil. Lay tortilla in the pan and evenly cover the entire tortilla with mozzarella, parmesan. Garlic salt and Italian seasoning.
3. Place the chicken evenly over 1/2 of the tortilla. You may want to cut larger chicken pieces in half before placing in the tortilla. Spread pasta sauce over the chicken. Allow to cook, open face until cheese is melted and bottom of tortilla is lightly browned.
4. Using a spatula, gently fold the tortilla in half and press down to help it hold it’s shape. Cook an additional 1-2 minutes on each side, until golden brown.
