And just like that the holidays are over. We are all getting back to the hustle and bustle of work, school and our crazy schedules, and if you are like us, you just need quick, grab-n-go lunches throughout the week. This chicken salad will be your best friend. The portions are WAY bigger than the original version and it has LESS calories, but you know we did not sacrifice any of the flavor.
Copycat Costco Chicken Salad

An anonymous Fit Foodie Chicks Member has experience great success with her Fat Loss Journey!
Client B began by participating in a Fat Loss Cut and achieved a 7lb loss in her body fat by doing cardio 3x/week for no more than 30min and doing weights 4-5x/week at home. The protein in her diet was at 29% of her total calories.
Subsequently, we modified her plan to a Reverse Diet in order to increase her metabolism and maintain a loss in body fat while increasing lean muscle. As a result, Client B found herself feeling both satisfied and in control of her food, while still achieving her goals!
Not only that, but enjoying her food choices with a guilt-free mindset.
Comments Client B has shared along her journey:
✶ “I feel like for the first time since counting macros (few years) I am actually getting enough food to feel satisfied and have that “food freedom” you talk about. I was able to drink a couple beers and eat a few tacos yesterday while still staying within my macro goals. “
✶ “With the extra calories I am able to fit in more foods and it does not feel like I am restricting myself in anyway. I almost feel like I am cheating on some days! “
✶ “I was able to enjoy my family and the food without guilt or fear of losing progress.”
✶ “Continued to stay the same weight as well as eat foods that don’t feel like I’m dieting or restricting.

The classic “BEC” Breakfast sandwich, just like you get from the diner, but better!
BEC Breakfast Sandwich
Serves 1
* 1 english muffin
* 2 slices fully cooked packaged bacon (12 g.)
* 2 egg whites (about 4 Tbsps./60 ml.)
* 1 egg
* 1 thin slice cheddar cheese (11 g.)
* Salt and pepper to taste
Spray a small skillet with cooking spray and place over medium heat. Toast muffin, if desired and crisp bacon in microwave according to package directions; 20-30 seconds Pour egg whites and 1 whole egg into hot pan. Cover and cook, just until a white film forms over the yolk of the egg. About 2-3 minutes. Carefully flip eggs, trying not to break the yolk unless you want it cooked over-hard. Cook until yolk is cooked to desired doneness: 3-5 seconds for over-easy, 6-9 seconds for over-medium and 10-20 seconds for over-well/over-hard. Layer the cheese, cooked egg and crisped bacon onto the bottom of the muffin. Season with salt and pepper to taste. Place top of the muffin on top and enjoy!
