 This dip is the ultimate crowd-pleaser, perfect for any football feast. 

Game Day Queso
Serves 10

Ingredients
* 1 lb. 93% lean ground beef (454 g.)
* 1 1/4 oz. reduced sodium taco seasoning (36 g.)
* 1 1/2 c. low-fat cottage cheese (339 g.)
* 1/2 c. shredded Monterey jack cheese (56 g.)
* 1/2 c. reduced fat shredded cheddar cheese (56 g.)
* 10 oz. diced tomatoes with chilis (284 g.)
Optional garnish:
* Chopped cilantro
* pico de gallo

In a large skillet over medium-high heat, cook the ground beef with the taco seasoning breaking into crumbles as it browns, 5-8 min. While meat is cooking, in a small blender or food processor, blend all three cheeses until mostly smooth. Add blended cheeses and tomatoes to the skillet and cook, stirring often, for 8-10 minutes or until all cheeses have melted and the queso has thickened. Garnish with optional cilantro and pico de gallo.

Serving suggestion: Serve with your favorite chips or veggies for dipping. Extra ingredients not included in nutrition facts, log separately.

Air Fryer Individual Cookie Baked Oatmeal
Serves 1

Ingredients
* 1/2 c. oats (50 g.)
* 1/2 ripe banana (50 g.)
* 100 g. egg whites (about 4 eggs with yolks removed)
* 1/4 c. nonfat plain Greek yogurt (64 g.)
* 1/8 tsp. salt
* 1/4 tsp. baking powder
* 1 Tbsp. zero calorie brown sugar substitute, such as Swerve Brown (12 g.)
* 1 tsp. butter flavoring (optional)
* 1 Tbsp. chocolate chips (17 g.)

pray a 1 cup capacity oven-safe dish with cooking spray. In a small blender, add all ingredients, except choc chips and blend until fully combined. Pour batter into prepared ramekin. Top with chocolate chips. Air fry 350°F (175°C) for 15-20 minutes, or until it is set on top but still soft in the middle.

Serving suggestion: Serve warm and top with additional chocolate chips. Additional chocolate chips not included in nutrition facts, log separately.

Conventional oven conversion:
* Increase heat to 425°F (220°C)
* Increase cooking time to 20-25 minutes

Slow Cooker Chili Garlic Chicken Fried Rice
Serves 8

Ingredients
For the chicken:
* 3 lbs. boneless skinless chicken breast, cut into large chunks (1.4 kgs.)
* 2 Tbsps. hot chili sauce, such as sriracha (36 g.)
* 2 Tbsps. garlic paste (12 g.)
* 2 Tbsps. reduced sodium soy sauce (30 ml.)
* 3 Tbsps. honey (60 g.)
* 1 Tbsp. rice vinegar (15 ml.)
* 1 Tbsp. ginger paste (18 g.)
* 1/2 tsp. salt
* 1/4 tsp. ground black pepper
For the “fried” rice:
* 4 c. cooked white rice, leftovers work well (600 g.)
* 4 Tbsps. reduced sodium soy sauce (60 ml.)
* 2 Tbsps. fish sauce, substitute extra soy sauce (30 ml.)
* 3 Tbsps. honey (60 g.)
* 2 Tbsps. rice vinegar (30 ml.)
* 2 Tbsps. sesame oil (30 ml.)
* 24 oz. frozen mixed veggies (680 g.)
* 6 whole eggs
* 1 1/2 c. liquid egg whites (about 8 eggs with yolks removed/368 g.)
Garnish:
* 3 stalks of green onions, diced (30 g.)

Instructions:
1. Add chicken ingredients to slow cooker. Cook on low 3-4 hrs or high 2-3 hrs. Shred chicken.
2. Preheat oven to 475°F. Spread rice on a sprayed sheet pan. Mix soy, fish sauce, honey, vinegar, sesame oil. Pour over rice. Bake 15-25 min, stirring every 5 min until crispy.
3. Add veggies, stir, bake 10-15 min. Add rice/veggies to chicken.
4. Bake whisked eggs on sprayed pan for 8-10 min. Chop and mix into rice. Top with green onions.

Meal prep: Store in containers for up to a week. Reheat 3-4 min in the microwave.

Slow Cooker Chili Garlic Chicken Fried Rice
Serves 8

Ingredients
* 1/2 of 1 medium cucumber, diced (about 100 g.)
* 1 green onion, chopped (10 g.)
* 2 Tbsps. lemon juice, divided (30 ml.)
* 1 Tbsp. olive oil (15 ml.)
* 1 Tbsp. chopped fresh parsley
* 1 Tbsp. chopped fresh chives
* 1 Tbsp. chopped fresh dill
* 1/2 of one jalapeño pepper, seeded and diced (15 g.)
* 1/2 c. plain nonfat Greek yogurt (127 g.)
* 5 oz. reduced fat feta cheese (142 g.)
* 1/8 tsp. ground black pepper

Instructions:
In a bowl, add cucumbers, green onions, 1 Tbsp. of the lemon juice, olive oil, parsley, chives, dill and jalapeño. Stir to combine and set aside to marinate. In a small blender or food processor, add the Greek yogurt, feta cheese and remaining lemon juice and process until well blended. Place the feta mixture in a shallow serving plate and top with the marinaded cucumbers and jalapeños. Sprinkle the black pepper over the top and serve,
