In honor of Kristin’s birthday tomorrow, and coincidentally it also being Bastille Day (National Day of France), we just had to recreate one of her FAVORITE French Disney treats…beignets. Now these may not be Mickey shaped, but at 160 calories and 10 g. of protein for SIX bites, the taste is unbelievable. We are pretty sure the Mouse would approve!

Beignet Bites
(Makes 36 bites)
* 1 3/4 c. self-rising flour
* 30g. vanilla protein powder
* 1/2 c. nonfat plain Greek yogurt
* 1/2 c. unflavored, unsweetened sparkling water
* 3 c. hot water
* 1/4 c. baking soda
* 1/4 c. powdered zero calorie sweetener
Preheat oven to 425℉. Line a baking sheet with parchment paper or lightly spray with cooking oil and set aside. In a large mixing bowl or stand mixer, combine flour, protein powder, greek yogurt and sparkling water until a sticky dough comes together. On a floured surface, with floured hands, make two equal balls of dough. Roll each dough ball into a rope shape approximately 1-inch in diameter and 18 inches long. Using a sharp knife, cut dough into 1-inch pieces; set aside. Pour hot water and baking soda in a mixing bowl and whisk until dissolved. Using a slotted spoon, briefly dip several pieces of dough at a time into the water, let water drain and then place on prepared baking sheet. Bake for 9-11 minutes or until lightly golden brown. While baking, put the powdered sweetener into a large paper or zip-seal bag. As soon as the beignet bites come out of the oven lightly spray them with cooking oil and immediately dump them into the bag. Seal and shake until well coated in sweetener, Eat warm.
1 serving: 6 bites, or about 2.8 oz.

P.S. The photo is one of our clients (she wishes to remain anonymous). She eats like a “normal human”! No food restrictions, no pills, no supplements, no fairy dust, etc. She’s eating over 1800 calories currently (we keep giving her more food!), NO CARDIO, weight training on average 3-5x/week. Nothing crazy! Of course, this is customized to her body. We check-in weekly and continue to make adjustments for her. The goal is to create a “do-able” lifestyle while getting results.
