BANANA MUFFINS

🍌 Got a few ripe bananas laying around? Everyone knows what that means. Time to make banana bread! This easy recipe makes a quick grab and go breakfast or snack. And since each regular sized muffin has 7 grams of protein and is under 100 calories, you can have a few! Or better yet, my favorite thing to do if I have some extra calories, is to eat them warm with a small pat of butter!

How do you eat your banana muffins?

Banana Muffins

(Makes 20 regular sized muffins)

* 3 very ripe bananas (the riper, the better)

* 2 eggs

* 3/4 cup Greek yogurt

* 1/4 cup zero calorie sweetener (such as Swerve or Lakanto)

* 1/4 cup molasses

* 1/4 cup unsweetened applesauce

* 1 teaspoon vanilla

* 1.5 teaspoons cinnamon

* 2 cups Kodiak cakes power cakes flapjack and waffle mix

* 60g. vanilla (or cinnamon) protein powder

Preheat oven to 350℉. Spray a regular sized muffin tin with nonstick cooking spray. Set aside. In a large mixing bowl, mash bananas. Add all other ingredients except the protein powder. Using a stand mixer or hand mixer, mix all ingredients until well incorporated. Add protein powder and mix on low until just blended. Fill muffin cups about 3/4 full. Bake 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

LOBSTER CRAB ROLL

🦞Until a few weeks ago, this foodie had actually never tried a lobster roll before! Now that I have, I’m not sure how I lived so long without them in my life! If you are a lobster lover like me, you will definitely want to go grab all the ingredients right now! The roll is overflowing with the lobster and crab meat, so much so that you may have to eat half of it with a fork before you can even pick up the sandwich! I could have made the portion smaller, but you know we don’t do small portions around here, so grab that fork, get ready to get messy and enjoy!

Lobster Crab Roll

(Makes 1 sandwich)

* 1 hot dog bun

* 1 Tablespoon butter, divided

* 1 (6 oz.) can premium Lump crab meat, well drained

* 1 Tablespoon light mayonnaise

* 1 Tablespoon chopped green onion

* 1/4 teaspoon salt

* 1/8 teaspoon pepper

* 1 oz. fresh arugula

* 1/2 oz. red onion, sliced

* 2 oz. cooked lobster meat (thawed and drained, if frozen)

Pre-heat a small skillet over medium heat. Butter the inside of the hot dog bun with 1/2 Tablespoon of butter and place buttered side down into pan. Cook the bun for 2-4 minutes, or until golden brown and toasted. In a small bowl, combine the crab meat, mayonnaise, onion, salt and pepper. Mix well. Inside the toasted bun layer: arugula, onion, crab mix, lobster meat. Melt remaining butter in the microwave for about 10 seconds, or until melted. Drizzle over the top of the lobster.
