


Cherry Ham ‘N Jam and Quick Marinated Chicken.
You CAN reach your goals once and for all, and you DON’T have to be miserable in the process!

This is the easiest chicken marinade and the beauty is, it doesn’t need to marinate for long to be super flavorful and juicy! The recipe calls to bake or air fry the chicken, but when the weather is nice, we love to throw these on the outdoor grill and get a yummy char-grill crust on them!

Quick Marinated Chicken
(Makes about 1.5 pounds cooked chicken, or 8 servings. (Air fryer instructions included)
* 2 tablespoons Montreal Chicken Seasoning
* 1/4 cup olive oil
* 3 tablespoons white vinegar
* 2 pounds raw, boneless, skinless chicken breasts, sliced thin
Combine seasoning, oil and vinegar in a large zip-seal bag. Seal and mix well. Add chicken to the bag, seal, removing as much air as possible. Massage chicken to coat with marinade. Marinate at room temperature for 5-30 minutes (up to overnight in the refrigerator) If refrigerated, set chicken out at room temperature for about 15 minutes before cooking. Pre-heat oven to 400℉ (Air fryer to 375℉). Bake on a rimmed baking sheet for 22-25 minutes or until chicken reaches an internal temperature of 165℉ (10-15 minutes in the air fryer). Remove from oven and allow to rest 5 minutes before serving or slicing.

🤨 You know the phrase “don’t knock it ’till you try it.”? I 100% did not think I would ever put jam on my breakfast sandwiches, but these days I find myself buying the industrial size jar of jam for this very purpose alone! 🍒 To me, the contrast of the tart and sweet cherry is the best flavor, but any reduced sugar jam will do the trick! One tip; it can be messy, so when you sit down to eat it you have to commit! 🤣 And like my son says; “it’s no fun if it’s not messy!”

Cherry Jam ’N Ham
(Serves 1)
* 1 Dave’s Killer English muffin
* 1 wedge Laughing Cow cheese, light
* 1 Tablespoon reduced sugar cherry jam/preserves (such as E.D. Smith’s)
* 3 egg whites, whisked (6 Tablespoons)
* 2 oz sliced Canadian Bacon
Preheat a small skillet over low-medium heat. Toast the English muffin. Heat the Canadian bacon through in the preheated skillet, about 1-2 minutes per side. Remove from pan and set aside. Spray the pan with nonstick cooking spray and pour egg whites into pan. Cover and allow to cook for about 1-2 minutes, or until bottom is set. Using a large spatula, flip egg whites over and allow to cook another 1-2 minutes until cooked through. Remove eggs from pan and fold into fourths. Spread the cheese on one side of the toasted English muffin and spread the jam on the other. Layer the Canadian Bacon and folded egg white between two sides of the English muffin.
