




These sweet, melt-in-your-mouth treats are only 4 calories for every 3 bite-sized cookies, so you could truly eat the whole batch and not feel one bit bad about it!
Meringue Cookies
Makes 36 bite-sized cookies
* 2 egg whites (not from a carton) (30 g.)
* 1 tsp. lemon juice (5 ml.)
* 4 Tbsps. zero calorie powdered sugar substitute, such as Swerve Confectioner’s (36 g.)
* 1/2 tsp vanilla extract (2.5 ml.)
* 1/2 tsp. cream of tartar (0.5 g.)
Preheat oven to 200℉ (93℃). Line a large cookie sheet with parchment paper. Set aside. Using a stand mixer, or a hand mixer, vigorously whisk egg whites on high until bubbles start forming, about 1-2 minutes. Add lemon juice and continue whisking until mixture turns extra-frothy, about 2 more minutes. Slowly add sweetener 1 Tbsp. at a time, whisking in between, until mixture becomes silky and doubles in size. Once all of the sweetener is in, add the vanilla and cream of tartar and continue whisking until stiff peaks form and hold their shape, about 2-4 minutes. Using a pastry bag (or a zip seal baggie with the corner snipped off) pipe little bite-sized swirls directly onto the parchment paper lined cookie sheet. Bake for 40-45 minutes and then turn the oven off, leaving them inside for another hour as they cool. Meringues should be crisp and peel easily off parchment paper.

Nutella Stuffed French Toast
Serves 2
For the filling:
* 2 Tbsps. chocolate hazelnut butter
For the French Toast:
* 9 Tbsps. egg whites (138 g. or about 4 large eggs with yolks removed)
* 2 Tbsps. unsweetened almond milk (30 ml.)
* 1/2 tsp. vanilla extract
* 30g. vanilla protein powder
* 1/2 tsp. cinnamon
* 4 slices light bread, about 45 calories per slice (such as Sarah Lee Delightful)
Heat a large skillet or griddle to medium heat. Spray lightly with cooking spray.
Make the French toast: In a small blender (preferred) or large shallow bowl, blend or whisk together the egg whites, milk, vanilla, protein powder and cinnamon until well combined. If using a blender, pour mixture into a shallow bowl once well combined.
Spread 1 Tbsp. of chocolate hazelnut butter in the center of 2 slices of bread and place the remaining slices on top, making 2 sandwiches. Gently press the edges together to keep the filling from coming out the sides.
Dip each sandwich in the egg mixture, on both sides and lightly press down to ensure bread is soaked through. Place the soaked sandwiches on the hot skillet/griddle and pour any excess egg mixture evenly on top. Cook for 3-4 minutes on each side, until golden brown and cooked through.

During Kristin’s recent trip to the Netherlands she indulged (a few times) in a local treat called the “stroopwafel”. It is basically 2 thin waffle cookies, sandwiched together with a sweet caramel syrup in the middle. Eating one fresh from the factory is an experience not to be missed! While they may not be fresh off the waffle irons, you can find stroopwafels in most local stores. Sometimes they are called “Dutch Waffle Cookies”. Of course, the Fit Foodie Chicks found a way to enjoy the flavors of these treats, with added protein in this Ninja Creami Stroopwafel Ice Cream recipe!

Stroopwafel Ice Cream
Makes 1 pint
For the base:
* 11 oz. unsweetened almond milk (325 ml.)
* 1 Tbsp. fat-free, sugar-free, butterscotch or vanilla instant pudding mix (7 g.)
* 30 g. butterscotch, caramel (preferred) or vanilla protein powder
* 1 Tbsp zero-calorie brown sugar substitute such as Swerve Brown (12 g.)
* 2 Tbsps. fat-free cottage cheese (56 g.)
Mix-ins:
* 1 oz. unsweetened almond milk (30 ml.)
* 1 Dutch stroopwafel cookie (28 g.)
In a blender, or directly in the Ninja Creami pint container with an immersion blender; blend all base ingredients together until well combined and smooth. Cover and freeze base for 8+ hours directly in the Creami pint container. Once completely frozen, remove lid and allow to soften for 5-10 minutes.* Place in Creami machine as directed with your model’s instructions. Precess on “lite ice cream” mode. Add 1 oz. of almond milk and process again on “re-spin” mode. Break the stroopwafel into pieces and press it down into the center of the ice cream. Process one final time on “mix-in” mode.

No one wants to turn on the oven in the heat of the summer. You can enjoy these no-bake cookies year round!
No Bake Oatmeal Scotchies
Makes 24 cookies
* 3/4 c. unsweetened almond milk (177 ml.)
* 1 c. zero calorie sugar substitute, such as monkfruit (192 g.)
* 1/2 c. light butter, such as I Can’t Believe it’s Not Butter (112 g.)
* pinch of salt
* 1 tsp. vanilla extract (5 ml.)
* 90 g. vanilla (or butterscotch) flavored protein powder
* 1 packet of Butterscotch Sugar Free Instant Pudding Mix (1 oz./28 g.)
* 1/2 c. butterscotch morsels (112 g.)
* 3 c. quick cook oatmeal, dry (240 g.)
In a large saucepan over high heat, combine the milk, sugar substitute and light butter. Bring to a boil and boil for 1 minute, stirring constantly. Remove from heat and add in the salt, vanilla extract, protein powder and pudding mix. Whisk until no lumps remain. Add the butterscotch morsels and gently stir for 1-2 minutes or until the morsel begin to melt, but not completely. Fold in the oatmeal. Using a spoon or small cookie scoop, drop about 2 Tbsps. (40 g.) at a time onto prepared cookie sheet. Allow to set and cool for about 15 minutes. Store in an airtight container for up to 5 days.
