Are fried foods and late night snacks the achilles heel that sabotages your eating plan? These crispy, salty air fryer fried pickles will satisfy that craving without taking you off track! They come out so crunchy you won’t believe they are not deep fried! And at 66 calories per serving, you could eat the whole batch with zero guilt!
Air Fryer Fried Pickles
Serves 4 (or 1…)
* 8 oz. sliced dill pickle chips (227 g.)
* 1/2 c. all-purpose flour (63 g.)
* 1 1/2 tsps. garlic salt (9 g.)
* 1/2 tsp. black pepper (0.5 g.)
* 1/2 tsp. paprika (1 g.)
* 1 egg
* 1/2 c. panko breadcrumbs (30 g.)
Drain and dry pickle chips with paper towels. Dry as best as possible. In a small bowl, add the flour, garlic salt, black pepper, and smoked paprika and mix. In a separate bowl beat the egg. In a third bowl add the panko breadcrumbs. Dredge the pickles in the flour mixture, then into a bowl with the beaten egg, and lastly into the panko breadcrumbs. Spray the air fryer basket/tray with cooking spray. Lay the pickle chips in the basket making sure they do not touch each other. Work in batches if necessary. Lightly spray with cooking oil. Air fry at 400°F(205°C) for 7-10 minutes, or until golden and crispy. Serve with your favorite dipping sauce. Sauce not included in nutrition facts, log separately.

Cookies ’N Cream Ice Cream
For the base:
* 1 c. unsweetened almond milk (237 ml.)
* 1/2 c. fat-free cottage cheese (113 g.)
* 1 Tbsp. fat-free, sugar-free, white chocolate or vanilla instant pudding mix (7 g.)
* 30 g. vanilla protein powder
* 2 tsps. zero-calorie sugar substitute such as erythritol or monk fruit (8 g.)
Mix-ins:
* 2 Tbsps. unsweetened almond milk (30 ml.)
* 3 Oreo Thin cookies (22 g.)
In a blender, or directly in the Ninja Creami pint container with an immersion blender; blend all base ingredients together until well combined and smooth. Cover and freeze base for 8+ hours directly in the Creami pint container. Once completely frozen, remove lid and allow to soften for 5-10 minutes.* Place in Creami machine as directed with your model’s instructions. Process on “lite ice cream” mode. Add almond milk and process again on “re-spin” mode. Break the Oreo Thins into pieces and press them down into the center of the ice cream. Process one final time on “mix-in” mode.
Serving suggestion: top with additional Oreo pieces.. Not included in nutrition facts, log separately.
*If the top of the ice cream has not frozen completely flat, allow to soften enough so that you can scrape the top with a spoon to make it flat. This will help to prevent damage to the blade of your Ninja Creami.

Fruit on pizza? We could start a whole debate…but no one will argue that this high protein fruit tart pizza recipe isn’t a great snack or dessert. You could even make it a satisfying mini-meal! Sweet fruit, toasted pita, creamy yogurt and sweet honey…this delicious combination of flavors and textures will satisfy your cravings and your hunger any time of the day.
Fruit Tart Pita Pizza
Serves 4
* 2 Joseph’s™ Flax Oat Whole Wheat Pita Bread (37 g. each)
* 1 tsp. butter, melted (5 g.)
* 1 tsp. zero-calorie brown sugar substitute, such as Swerve Brown (4 g.)
* 1/2 c. fat-free cottage cheese (113 g.)
* 3 oz. marshmallow creme (85 g.)
* 30 g. vanilla protein powder
* 3 oz. fresh blueberries (85 g.)
* 3 oz. fresh sliced strawberry slices (85 g.)
* 2 tsps. honey (14 g.)
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Place Pitas on prepared baking sheet. Brush the tops of each pita with melted butter and evenly sprinkle brown sugar substitute evenly over pitas. Toast in the oven for 8-10 minutes or until brown sugar starts to caramelize and pita is toasted. While pitas are toasting, in a blender or a food processor, blend the cottage cheese, marshmallow fluff and protein powder until smooth. Place in refrigerator to chill until ready to use. Allow toasted pitas to cool slightly before frosting them evenly with the marshmallow mixture. Sprinkle fresh berries on top, drizzle honey evenly over the berries, cut into slices and serve,
