Chocolate Peanut Butter Puppy Chow
Makes 20 servings
* 12 oz. Rice Chex cereal (340 g.)
* 120 g. chocolate protein powder
* 1/2 c. zero calorie powdered sweetener such as Swerve Confectioner’s (72 g.)
* 1/4 c. no sugar added chocolate baking chips (56 g.)
* 1/2 c. reduced fat peanut butter (144 g.)
* 1 Tbsp. coconut oil (15 g.)
Pour cereal into an extra large mixing bowl and set aside. Combine protein powder and powdered sweetener and equally divide into 2 large zip-seal baggies. Seal and shake well to combine. Set aside. In a microwave safe bowl, combine the chocolate chips, peanut butter and coconut oil. Microwave for about 1 minute, stirring every 20 seconds, until chips are melted and mixture is smooth. Pour over cereal and stir to coat evenly. Immediately scoop the coated cereal evenly into the bags of sweetener and protein powder. Seal and shake (over the sink just in case) until completely coated. Spread out onto parchment paper to cool.

Sausage Spinach and Cheese Breakfast Bake
Serves 6
* 9.6 oz. fully cooked turkey sausage links or patties, chopped (272 g.)
* 2 c. raw spinach, chopped (85 g.)
* 1 c. shredded Swiss cheese (112 g.)
* 5 oz. grape tomatoes, cut in half (142 g.)
* 6 whole eggs
* 1 1/2 c. egg whites (about 12 eggs with yolks removed/368 g.)
* 1/2 c. 1% milk (118 ml.)
* 1/2 c. nonfat plain greek yogurt (127 g.)
* 1/2 tsp. salt
* 1/4 tsp. ground black pepper
* 1/4 tsp. ground nutmeg
Preheat oven to 375℉ (190°C). Spray a 9 X 13-inch (23 X 33-cm.) baking dish with nonstick cooking spray. Sprinkle the sausage, spinach, cheese and tomatoes evenly in the bottom of the pan. In a large mixing bowl, whisk together the eggs, milk, yogurt and seasoning. Gently pour into the baking dish. Bake, uncovered for about 50 minutes or until eggs are set.

Copycat Disneyland Peanut Butter Squares
Ingredients:
1/2 c. reduced fat peanut butter (144g)
1/4 c. powdered peanut butter like Pb Fit (32g)
30g vanilla or peanut butter protein powder
1 c. zero-calorie powdered sugar substitute like Swerve (144g)
2 Tbsps water
1/2 c. no sugar added semi-sweet chocolate chips like LILY’S (112g)
1 Tbsp coconut oil (14g)
2 Tbsps honey roasted peanuts, chopped (14g)
Instructions:
Line a small square pan with parchment paper and set aside. Blend peanut butter, powdered PB, protein powder, sugar substitute, and water until thick like cookie dough. Press mixture into the pan and refrigerate for 1-2 hours. Melt chocolate chips and coconut oil, stirring every 20 seconds until smooth. Line a tray with parchment paper. Cut peanut butter mixture into 16 squares, stack into 8 squares. Dip each stacked square into melted chocolate, top with chopped peanuts. Refrigerate for 5 mins to set chocolate. Store refrigerated for up to 1 week.
