Butter Pecan Ice Cream
Serves 1
For the Pecans:
* 2 Tbsps. roughly chopped pecans (19 g.)
* 1 tsp. butter (5 g.)
For the base:
* 1 1/2 c. unsweetened almond milk, plus 1 Tbsp. (370 ml.)
* 2 Tbsps. zero-calorie brown sugar substitute, such as Swerve Brown (24 g.)
* 30 g. butterscotch, caramel or vanilla protein powder
* 7 g. sugar-free, fat-free butterscotch instant pudding mix
Place a small skillet over medium-high heat. Add the pecans and cook, stirring constantly about 3-5 minutes. Add butter and continue to cook, stirring constantly, 2-5 minutes. Cool and store refrigerated in an air tight container until ready to mix in. In a blender, or directly in the Ninja Creami pint with an immersion blender; blend all of base ingredients except the 1 Tbsp. of milk, until smooth. Cover and freeze base for 8+ hours. *Place in Creami machine as directed with your model’s instructions. Process on “lite ice cream” mode. Using a butter knife, scrape the sides of the pint. Add remaining almond milk and process on “re-spin” mode. Add the pecans. Process on “mix-ins” setting.
*If the top of the ice cream has not frozen completely flat, allow to soften enough so that you can scrape the top with a spoon to make it flat. This will help to prevent damage to the blade of your Ninja Creami.

Chicken and Waffle Casserole
Serves 6
Ingredients:
* 6 frozen protein waffles such as Kodiak Power Waffles
* 3 large eggs
* 1 c. liquid egg whites (245 g./about 8 eggs with yolks removed)
* 1 c. plain, unsweetened almond milk (240 ml.)
* 1/3 c. nonfat, plain Greek yogurt (85 g.)
* 2 Tbsps. sugar free maple syrup (30 ml.)
* 1/2 tsp. salt
* 1/8 tsp. cayenne pepper
* 1 1/2 lbs. frozen lightly breaded chicken nuggets, such as Just Bare™
Preheat oven to 375°F (190°C). Spray a 9×13-inch (22×33-cm) baking dish with cooking oil. Cut each waffle into 8 pieces, and spread evenly in the prepared baking dish. In a large bowl, add all remaining ingredients except the chicken and whisk until well combined. Pour mixture over waffles. Cover and let sit for 15 minutes. Spread chicken pieces evenly over the egg-soaked waffles. Cover with foil and bake about 45 minutes. Uncover and bake another 15-20 minutes or until eggs are set and chicken is crispy. Let stand 5-10 minutes before serving.
Serving suggestion, serve with additional warm maple syrup drizzled over the top. Additional syrup not included in nutrition facts, log separately.

Mediterranean Tuna Melt

Ingredients:
For the tuna salad:
* One 5 oz. can chunk light tuna in water, drained (4 oz./113 g. drained)
* 2 Tbsps. finely diced red onion (16 g.)
* 1 Tbsp. capers, drained (10 g.)
* 1 Tbsp. sun dried tomatoes, drained and chopped (14 g.)
* 1/4 c. artichoke hearts, drained and chopped (55. g)
* 1 Tbsps. olive oil (15 ml.)
* 1 tsp. red wine vinegar
* 1 clove garlic, pressed or minced (1 tsp./4 g.)
* 1/2 tsp. oregano
* 1/2 tsp. parsley
* 1/8 tsp. salt
* 1/8 tsp. black pepper
To assemble the sandwich:
* 2 slices low calorie bread, such as Sarah Lee Delightful (45 calories per slice)
* 1 slice provolone cheese (19 g.)
Pre-heat a grill pan or skillet to medium heat and spray with cooking oil. Make the salad: In a medium bowl, combine all salad ingredients and mix until well combined. Assemble the sandwich: Place one slice of bread on the preheated grill pan or skillet and top with slice of cheese, all of the salad and the other slice of bread. Press sandwich down with a spatula or grill press and cover the pan. Cook for 2-3 minutes on each side, or until cheese is melted and bread is toasted.
